This is a Norwegian traditional dish that they used to make before but not anymore and it is sad because it tastes really good.
It is believed that Cabbage rolls in white sauce originally originated in Turkey. They often wrapped the food in grape leaves.
The King Charles the 12th of Sweden took the dish to Sweden in the 18th century and from there it came to Norway .
In Norway many people cook the cabbage roulette in lightly salted water but you need a string to help it stay still.
I prefer the simplest way: the refractory form.
Some people prefer brown sauce or sweet and sour sauce, there are many different “grandmother’s recipes” out there. I think one should revive old traditions from our ancestors, no recipe is “right” or “wrong”.
This time I have divided the cabbage roulette into two shapes because I have to freeze one.
You can use different types of cabbage, I used lettuce in this recipe but you can also use other types.
Ingredients
The cabbage roulette
- 12 cabbage leaves
- 500 gr minced meat
- 1 and 1/2 teaspoons salt
- 1/2 tsp pepper
- Nutmeg to taste
- 1/4 tsp ginger
- 2.5 tablespoons potato flour (you can use Corn starch if you do not have potato flour)
- 2 dl milk or water
How to prepare Cabbage rolls in white sauce
Boil lightly salted water and keep the cabbage leaves in the water and let them soak until they tender then let it Cool.
After that mix the minced meat and the spices, then dilute the minced meat with the mixture of milk (water) and potato flour.
Knead into a sticky dough.
Afterwards take a couple of tablespoons of minced meat and place it in the middle of the cabbage leaves and then fold it together so that it becomes a “package”.
Put it in a refractory form.
How to prepare White sauce
- 5 dl milk
- 2.5 tablespoons flour
- 2 tablespoons butter
- A little bit of the spices if you want.
Mix butter and flour in the pan and dilute it with milk.
Stir so that there are no lumps.
Be careful, white sauce can burn quickly!
Let it cook for few minutes.
Then pour it over the cabbage roulettes.
Put in the oven at 180 degrees until the minced meat is done (try it with a knife).
Served with boiled potatoes and carrots.
