As a Norwegian, I do not like hot lunches instead I prefer bread with some dressing and charcuterie.
There are alot of bread varieties in Tunisia but I prefer to make my own since the salt and sugar content is high in baked goods.

You can use different ingredients based on what you have on hand either honey, seed mixtures or nuts.
Oatmeal makes the bread more juicy, but remember to put the oatmeal in hot water for a while before you add it to the dough.
Ingredients
- 2 bags «complete bread» (1kg)
- 1 packet of dry yeast
- 1 dl oil
- 2 tablespoons sugar
- 1/2 tsp salt
- 3 dl oatmeal (soaked in 5 dl hot water)
- About 5 dl water (lukewarm)
- Eggs, milk and a pinch of salt for brushing
- About 5 dl wheat flour
How to prepare Home-made Wholemeal Bread
Soak 3 dl oatmeal with 5 dl of hot water in a bowl and leave it for a while.
Put everything dry in the food processor, add the oil and then dilute with the water.
If you need more flour, then add carefully some lukewarm water until you get a smooth but slightly sticky dough.
Let it rest for an hour under a kitchen towel.
Grease three forms with butter and roll out the dough into a sausage that you cut into three.
Put each sausage in the mold and leave the loaves rise.
Then brush it with the mixture of eggs, milk and a pinch of salt.
Bake at 225 degrees for about 40 minutes.
Let the bread cool before you cut it into slices.
