Gomme remains a strong and vibrant tradition in Norway, especially in parts of northern Norway, Trøndelag and in southern and western Norway.
It was often used as a maternity food in the past just like Bsissa here in Tunisia.Gomme was served in baptisms, weddings, funerals and served the harvest season.
There are many variations, from family to family and no way is right or wrong.
Time consuming job but it’s worth it!
Set aside a day and enjoy yourself.
Ingredients
4 liters milk
3-4 tablespoons sugar (depending on how sweet you want it)
1 liter of Soured milk
3 dl sweet cream
A little cinnamon
3-4 tablespoons wheat flour
A little cardamom
How to prepare Gomme
- First heat the milk to boiling point, after that remove the pan and whisk in the sugar and soured milk, as you whisk the milk should be separated from the rest.
- At the end of the cooking time, when the liquid is almost gone, add in the flour and cream.
- I used a hand mixer because I wanted a slightly finer consistency.
Finally put it in aluminum molds with little sugar and cinnamon, can be frozen in portions. - Eaten on top of a slice of bread, waffles, lefse or just alone.
