Jilbena with chicken is an easy dish to make. Jilbena means peas in Tunisia and it’s the main ingredient for this plate. In this recipe I have used frozen peas but when it’s peas season we buy whole pea pods and clean them ourselves.
The recipe varies from family to family so I have used my own twist on this.
What is right and what is wrong? yes… it depends on your taste and pleasure.
Ingredients
- 4 chicken pieces (use what you have)
- 3 smallspoons turmeric
- 1 smallspoon salt
- 3 smallspoons Ras El Hanout
- 2 smallspoons Harissa
- 3 smallspoons strong paprika powder
- 2 tablespoons tomato puree
- 4 garlic cloves
- 400 gr peas
- Oil
- 1 large onion or 2 small ones
- 2 potatoes
How to prepare Jilbena with chicken
Cut onions and garlic.
Put oil in a saucepan and let it warm.
Put the chicken and brown it a little with salt and pepper.
Add the onion and the rest of the spice except the herissa, Ras El Hanout and the garlic.
Let this simmer a little.
Add the tomato puree and Harissa and let it simmer a bit before you add the Ras El Hanout and garlic.
Put in the peas and potatoes, then pour over water until it covers Everything.
Let this simmer.
If the chicken is done before the potatoes, take it out and cook the sauce until the potatoes are done. Then put the chicken back in the pot.
The sauce should be full-bodied.
We eat this with bread.
