Ingredients
1 cauliflower head
2 tsp turmeric
1 tsp pepper
About 2 dl olive oil
2 tablespoons dried fried onions
1 teaspoon smoked chili
2 crushed cloves of garlic
1/2 tsp salt
2 small leeks
2 dl natural yogurt
The juice of half a lemon
Cashew nuts
Some pumpkin seeds
How to prepare Oven roasted cauliflower head
- Start by cutting off the greens on the cauliflower, turn it upside down and leave it in cold water for a while.
If you want the cauliflower head a little tender and not crispy, I recommend you to boil it a bit ahead.
- Mix olive oil, salt, pepper, smoked chili flakes, turmeric and garlic and rub the cauliflower well with it.
- Cut the leek and mix it with the yogurt and the dried onion and season it with lemon juice and some pepper and then put it in the fridge.
- Set the oven at 220 degrees for about 35 minutes.
- When the cauliflower head is done, add the yogurt dressing.
- Sprinkle the cashew nuts and pumpkin seeds on top of the finished cauliflower head as a garnish.
