Pumpkin is a fruit from the genus Cucurbita that belongs to the pumpkin family. There are approx. 20 species.
The one we know most in Europe is giant pumpkin with the clear orange color.
Here in Tunisia we have different varieties.
I must honestly admit that I was skeptical about the taste at first but it turned out as the best soup I have ever tasted☺️
I used the sweet yellow pumpkin.
Pumpkin soup is recommended on cool autumn and winter days. see also (Pumpkin Pie Recipe)
Ingredients
- About 1 kg of cleaned pumpkin
- 5 garlic cloves
- 1 tablespoon dried thyme
- 2 onions
- 1 tsp pepper
- 2 chicken bouillons cubes
- 1 Sour cream
How to prepare Pumpkin soup
Clean the pumpkin and cut it into pieces.
Fry chopped onion and garlic in a saucepan with oil .
Add the pumpkin pieces up and let them fry a little too.
Pour over the chicken bouillons and spices.
Let it cook until the pumpkin pieces are tender and then you can use a blender or stick mixer so that it becomes a puree.
Add more broth if you think the soup is too thick.
Finally add sour cream and leave it on low heat.
We eat soup with wholemeal bread.
Garnish it with some sour cream and a spring of Timmian if you have any.
