This sort of spice mixture is very important in North African dishes like couscous, meat, or in rice.
Every family has it’s own recipe, just like with Garam Masala and it can contain up to 32 different variety of spices. This is one of them.
You can buy it all set up in cans but I prefer to prepare it myself, like most of the local housewives do.
That means to go purchase all the spices that you want and take them to a special store to grind it incase you want to prepare a big amount.

Ras El Hanout and Harissa are present in an incredible amount in most of theTunisian dishes, when we prepared it, it was quite a large quantity.
This recipe is moderated so that you can try out the spice mixture to see if you like it .
Ingredients
- 2 teaspoons ground ginger
- 2 tsp cardamom powder
- 1 teaspoon cinnamon
- 2 tsp ground nutmeg
- 1 tsp alehand (scientific name is galangal)
- 1/2 tsp Chili
- 1 tsp turmeric
- 1/2 tsp pepper
- 1 Clove
How to prepare Ras El Hanout
Mix everything together and put it in a clean and dry jar.
If the spices mixture is left in a dark kitchen cabinet, it will last even for a longer time.
