These are just as good after being frozen as fresh and great to take with you for an outdoor lunch or as school food.
Tebirkes is originally a Danish yeast bread (pastry) made from folded puffed pastry (water/milk, butter, flour, salt, smeared with beaten eggs and sugar and sprinkled with poppy seeds.
There are varieties of fillings with butter, sugar and marzipan, almond paste or chopped almonds, which gives the dough a caramel-like consistency.
I found this recipe online and changed it my own way … thyme and fresh herbs were in the original recipe, certainly good but I did not have it ….
I reckon they have called it Tebrikes because of the folding of the dough otherwise it is not much like the original Danish Tebrikes.
Ingredients for the dough
- 1 kg of white flour
- 200 gr butter
- 1 packet yeast
- 3 small spoons salt
- 4 small spoons oregano
- 1 small spoon basil
- 2 small spoons baking soda
- 2 small spoons sugar
- 6 dl Soured milk (in Norway they called it kefir, in Tunisia Milk rayeb )
No need to let the dough rise.
How to prepare Tebirkes with filling
Use what you like, I used cheese (cheddar hamburger cheese, ham and onions … next time I will put on some ketchup).
Mix everything that is not liquid. After that melt the butter and let it cool.
Put the butter and the Soured milk and stir it to make a smooth dough.
No need to let it raise.
Brush the paste with eggs, white cheese and barbecue spices (the varieties are many) before you put it in the oven at 255 degrees for about 16 minutes.

- Mayonnaise
- Ketchup
- sour cream
- Paprika powder
- Mustard
- Sesame paste
- Pepper
