We had pancakes every Wednesday when I was young so this is a childhood memory.
I prefer Pancake with turkey bacon without butter in the mixture, others use both butter and sugar in it.
In this recipe we had bacon and boiled potatoes while others use only sugar or blueberry jam.
There are countless recipes for pancakes but this is the one I prefer.
This recipe is for 4 servings.
Ingredients
- 4 eggs
- 1/2 small spoon salt
- 3 dl wheat flour
- 2 potatoes
- 5 dl milk
- Bacon do as much you want (I have used turkey bacon but both beef and pork go well)
- Some butter to fry the bacon and for the boiled potatoes.
How to prepare Pancake with turkey bacon
Whisk eggs and salt, mix in the milk and finally the flour (Make sure that there are no lumps).
You can make the mixture in advance to put it in the fridge, it gets a little too thick so dilute it with some milk.





Bring the potatoes to boil with water and a pinch of salt.
After that fry the turkey bacon.
Fry the pancakes in a hot pan with little butter each time you pour in the mixture.





Let the mixture harden a little before you flip it to the other side.
Served with little sugar, bacon and boiled potatoes.
